Ingredients
For the Base:

English muffins, split into halves

of olive oil or melted butter, for lightly toasting
For the Toppings:

eggs, gently scrambled (soft and fluffy works best)

shredded cheddar cheese – or whatever cheese you love (mozzarella, pepper jack, gouda… all fair game!)

of cooked bacon, crumbled — or substitute with sausage, chopped ham, or sautéed vegetables such as bell peppers or mushrooms.

Salt and black pepper, to taste
Optional Garnishes (Customize to your vibe):
A pinch of crushed red pepper flakes if you like a little heat
Add a touch of brightness with fresh herbs such as parsley, basil, or chives.

Instructions
Preheat the Oven
Set your oven to 375°F (190°C) and let it preheat while you prepare the rest of the ingredients.
Prepare the English Muffins
Split the English muffins in half using a fork for a craggy texture.
Gently toast the split muffin halves using a toaster or briefly under the broiler.
Place the toasted halves on a baking sheet lined with parchment or lightly greased.
Gently coat each muffin half with a bit of olive oil or melted butter to enhance flavor and help keep them from turning soggy.
Scramble the Eggs
Break the eggs into a bowl and lightly whisk them with a small amount of salt and pepper.
Heat a nonstick skillet over medium heat.
Pour in the eggs and gently scramble them until they’re just set—soft, fluffy, and still moist (about 2–3 minutes).
Remove from heat and set aside.
Assemble the Muffin Pizzas
Spoon the scrambled eggs evenly onto each English muffin half.
Top with shredded cheese.
Add cooked, crumbled bacon on top, or use your favorite protein alternative instead.
Add optional toppings such as chopped green onions, fresh spinach, or other diced vegetables.
Bake
Transfer the baking tray to the oven once it has fully preheated.
Bake for 5 to 7 minutes, or until the cheese is completely melted and starts to bubble.
Garnish and Serve
Remove them from the oven and let them rest for a few minutes before serving.
Garnish with fresh herbs, a sprinkle of red pepper flakes, or a few drops of hot sauce, if desired.
