Instructions
Place the chicken breasts in the bottom of the crockpot.
Layer the sliced onions and peppers over the chicken.
Pour the salsa evenly over the chicken, ensuring all pieces are covered.
Sprinkle chili powder, cumin, garlic powder, salt, and black pepper over everything.
Cover the crockpot and cook:
On low heat for 4 to 6 hours,
OR
On high heat for 2 to 3 hours, until the chicken is tender and cooked through.
Shred the chicken right in the crockpot using two forks.
Stir the shredded chicken into the salsa and spices.
Cover and cook on low heat for an additional 15 to 30 minutes to let the flavors blend.
